Lead Baker — The Forgotten Bakery


Location: Sacramento, CA

Schedule: 3 - 5 days per week, 4am-12:30. This position is part time to full

Compensation: Competitive hourly rate (based on experience) 17-19$ plus tip pool ($24-$28)



ABOUT THE ROLE


The Lead Baker is responsible for executing and guiding daily production of our core products, including bagels, empanadas, and baked goods. This is a hands-on leadership role, focused on maintaining consistency, efficiency, and quality across all baking operations.


This is not a management position, but the Lead Baker plays a key role in setting the tone of the kitchen, supporting the team, and ensuring production runs smoothly from start to finish.



KEY RESPONSIBILITIES


Baking & Dough Production

    •    Lead daily bagel and empanada dough production

    •    Mix, shape, and manage fermentation timelines for bagels

    •    Oversee dough handling, shaping, and baking processes

    •    Ensure consistency in product quality, size, and timing

    •    Manage oven workflow and ensure all bakes are ready for service



Daily Prep & Organization

    •    Oversee and assist with prep of fillings, spreads, and baked goods

    •    Create and execute daily prep lists to ensure readiness for current and next day

    •    Ensure all prep is properly labeled, dated, and stored (FIFO)

    •    Work closely with prep staff to maintain efficient workflow



Team Support & Leadership

    •    Guide and support bakers and prep staff during production

    •    Provide hands-on support during busy periods

    •    Help train team members on baking standards and techniques

    •    Maintain a positive, focused, and team-oriented environment

    •    Communicate clearly with Kitchen Manager and ownership on production needs



Catering, Wholesale & Production Flow

    •    Coordinate production to fulfill catering, wholesale, and pre-orders

    •    Prioritize high-volume and specialty orders to ensure on-time completion

    •    Maintain clear communication around large orders and special requests



Inventory & Kitchen Standards

    •    Monitor flour, ingredients, and specialty supply levels

    •    Assist with daily inventory tracking and organization

    •    Maintain cleanliness of all baking equipment, tools, and storage areas

    •    Follow all cleaning checklists and food safety procedures

    •    Ensure compliance with all health and sanitation standards



QUALIFICATIONS

    •    Strong baking experience required (bagels or bread preferred)

    •    Experience in a high-volume kitchen or bakery

    •    Leadership or lead position experience preferred

    •    Highly organized and detail-oriented

    •    Ability to work early mornings and in a fast-paced environment

    •    Strong communication and teamwork skills

    •    Able to lift 50 lbs and stand for extended periods

    •    Food Handler Certification required (or must obtain within 30 days)
